You can load a regular save and start split screen co op from the settings menu. You will need to build a cabin for the 2nd player (at Robin's), then open the pause menu and go to the tab with the controller. Scroll down to the multiplayer section and select 'start local co op.'. Have your player 2 press + on their controller to join.
Yes it can play switch games that support local wireless with a real Nintendo switch. The only caveat is that the switch needs to be modded, running atmosphere cfw, and has to have a specific plugin installed. Then it works similar to yuzu, you just both need to be on the same network. Imo, it's easier to just use 2 PCs and yuzu on both.

We play Splatoon online with a single copy. One of the profiles must be the one used to purchase the game. Game sharing does not require a family pass or any form of Nintendo Switch online service, but it is required for online play. There is also a LAN mode in Splatoon and Mario Kart that works with a single copy without Nintendo Switch Online.
You may also need to check the settings in World Settings (pencil icon) → Multiplayer. If you are connected online and signed into both a Nintendo Account and a Microsoft Account, then all online play is routed via the Xbox Live service. Add each other as Microsoft/Xbox Live friends in Friends tab → Add friend.
